The item nbt menu can be used to configure the NBT tags of custom items. It should look like this:

• Use the Back button to go back. If you made any changes, they will be kept.
• Use the Configure... button to configure additional NBT of your custom item. An example is shown below.

Note that NBT is a rather advanced topic in minecraft, so you should only use it if you know what you're doing.
